I know it's hard to stay on top of your workouts with your busy schedule and frankly with just being exhausted(believe me I know). I want you to know that I care and support you! NEVER GIVE UP! PUMPKIN MUFFINS! & let me tell you they are so yummy! They are also boyfriend approved Josh loves them!
1 cup pumpkin puree
1 1/2 cups quick cook steel cut oats
1/4 cup unsweetened apple sauce
1 tbsp vanilla extract
2 tbsp melted coconut oil
1/4 unsweetened almond milk
1/4 cup honey
1 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/2 tsp pumpkin spice
a sprinkle of salt
1. Pre-heat oven to 350 degrees. Lightly spray a muffin tin with coconut oil spray.
2. Combine all ingredients into a blender/mixer or mix by hand ( tip: they'll turn out better if you use a blender!).
3. Pour into greased muffin tins and bake for 15 mins.
4. Recipe makes 10-12 muffins. Perfect for a mid-morning snack!
