Last night, a few of my girls came over for a girl’s night. Which was much needed. Life has been crazy busy that fitting in anything extra like girl time has not been easy. So I finally sent out the mass text to treat my girls to some yummy food, healthy treats, and, of course, some red wine.
Once I sent the text there was no backing out when the rest of the week got busy or exhausting. On Wednesday night I was a little stressed about how am I going to be able to get everything done for the next night with my Thursday being completely booked until an hour before the girls would show up. But let’s just say having only 1 hour made me kick ass on getting stuff done! (Of course, a huge thank you to my amazing boyfriend who now is able to make broomstick cheese sticks in a matter of 30 secs per broomstick - I’ll share the recipe below).
Knowing I was going to be short on time, I am made a super easy healthy dinner, and guess what? The girls LOVED IT! Here are my healthy Halloween girl’s night recipes below:
Lean Green Chili
1 pound Ground Chicken (you can find it at Trader Joes)
1 can Pinto Beans
1 can Kidney Beans
2 cans tomato sauce
1 zucchini diced up
Your favorite everyday seasonings (you can’t go wrong with chili powder and garlic salt)
Directions: Cook the ground chicken in your favorite seasonings. Add zucchini and let cook on low for 5 minutes. Add in everything else and cook on low of another 5-10 minutes. Turn off stove and cover with a lid. Let sit for at least 5 minutes.
When life gets crazy you have to book out time for the little things: a coffee date with a friend, a bubble bath & a good book, a dinner with the family, a bike ride, a date night with your babe. Life goes by so fast that if you don’t book these things weeks in advance, you can easily get sucked into the hustle of everyday life. We have time. We just have to save time for these events. Live your life - don’t just endure it.
But back to Girl’s night
We had a great relaxing evening, cute festive appetizers (see below), red wine, and chili - all fit perfectly with the rain and cold. We all chatted for about an hour and then watched one of my all-time favorite movies Practical Magic which some of the girls had not seen yet. I also made healthy sweets! The pumpkin muffins & peanut butter cookies were a hit, but not as exciting as the mini cupcakes Morgan brought from Sweet Pea Bakery in Arroyo Grande! YUM! Perfect size!
Here are the Healthy Halloween appetizers Josh and I made:
String Cheese Broomsticks
8 string cheese sticks
24 pretzel sticks
1. Cut each string cheese stick into thirds
2. Make lengthwise cuts around the each third of the cheese stick to about half way up
3. Wiggle a pretzel stick in at the top
4. Bind with a piece of chive
1. Peel 8-10 oranges
2. Cut up tiny pieces of celery
3.stick the celery piece in the top to give a stim.
